Wilson’s grew from weekend cookouts, a young man’s love of making sauces, and a family who believed in him. Today, that same love brings people together around our tables in Downtown Hilliard.

Our story
It started with something made to share.
Before there was a restaurant, there was a family gathered around the grill, trying Xavier’s latest sauce. Good food brought everyone together. Their encouragement gave him the confidence to keep creating.
Hilliard roots
A curiosity that began at home
Xavier graduated from Hilliard Davidson High School, where he played varsity tennis, and went on to study business in college. He loved eating out with his dad and trying new things. Before long, that curiosity found its way into the family’s weekend cookouts.
He began making sauces to pair with whatever was on the grill. As the recipes won over the family, he started dreaming about sharing them with more people.
A little sauce. A bigger dream.
Meet ErryTang
The family bottled Xavier’s hot sauce and called it “ErryTang”—because, as they liked to say, you could put it on everything.
The Marathon in Downtown Hilliard gave the sauce a place on its shelves. Later, Hoagie City made room for it on the counter. Those early supporters helped a family idea reach new neighbors and gave Xavier another reason to keep going.
Finding our people
More than a kitchen at the Moose
After an early kitchen venture and a pause along the way, the family found an opportunity to serve members at the Hilliard Moose Lodge. Working side by side, father and son could share the food they loved with a community that welcomed them.
They also hired members’ children, giving teens a chance to gain work experience, make friends, and find their confidence. The kitchen became about more than the next meal. It was about familiar faces and connections that lasted beyond a quick hello.

A place to call Wilson’s
A local restaurant owner saw what Xavier and his family were building and offered them the chance to buy his location. His encouragement stayed with them:
“I root for the underdogs, and I’m rooting for you.”
In August 2025, longtime supporters and friends Eric Yap and Jamie Rice joined the journey. With their help, Wilson’s Bar & Grill opened its doors on August 15, 2025.
The dream had a new home, but its heart stayed the same: family, food, and a community worth showing up for.

Hilliard is part of our family.
Our story moved forward because local people made room for us, encouraged us, and gave us a chance. We want to carry that spirit into everything Wilson’s becomes.
That means a commitment to supporting Hilliard schools and local organizations, encouraging young people, and making our restaurant a welcoming place to connect. Community isn’t just where we do business. It’s why this place matters to us.

That first batch of sauce mattered because it was going to people Xavier loved. We carry that same care into the food we serve today, with a commitment to fresh ingredients, premium products, and flavors worth sharing.
